
10 Minute Cheat Fried Rice

- 1 tablespoon peanut oil
- 250 g minced pork
- 2 cloves garlic
- 1 long fresh red pepper
- 1 1/2 tablespoon kecap mani
- 450 g microwave jasmine rice
- 110 g (2/3 cup) frozen peas
- 2 eggs
- 1 tablespoon light soy sauce
- 1 tablespoon mild hot sauce
- 1/2 cup fresh basil leaves
- Fried shallots, for serving
- Heat the oil in a wok over high heat. Add pork and cook, stirring often, for 3 minutes or until browned.
- While the pork cooks, chop the garlic and chilli.
- Push the pork to one side of the wok and add the garlic to the empty side. Cook garlic, stirring, for 30 seconds, then stir into pork. Add 1/2 tablespoon kecap manis and stir to combine. Cook, stirring, for 30 seconds or until caramelized.
- Use your hands to break the rice in the bundle. Add the rice and peas to the wok. Cook, stirring, for 30 seconds. Push the mixture to one side of the wok and crack the eggs into the empty side. Cook the eggs for 15 seconds then chop them in the wok and mix them with the rice.
- Add soy sauce, sweet chili sauce and remaining 1 tablespoon kecap mani to wok. Mix to coat. Serve sprinkled with basil, chilli and fried shallots.
