Apples au gratin with goat cheese

- 2 gray Canada type apples
- 2 Royal Gala apples
- 1 brick of whole cream
- 1 egg
- salt
- mild red pepper
- dry goat cheese
- Preheat the oven to 180°C: start by buttering an ovenproof dish.
- Strain in water, remove the core from the apples and cut them into slices (like potatoes for a gratin).
- Separate the Gala des Canadas then reserve.
- In a bowl, whisk the egg with the cream and season with salt and sweet pepper.
- In a dish, alternate the layers of Gala and Canada (this is to bring what is called lamb's lettuce to the dish, the Canada being melting and the Gala firmer!).
- Cover with the egg mixture then grate the goat cheese on top.
- Bake for about 35 to 40 minutes, depending on the oven.
- Enjoy with poultry or a Morteau sausage, this dish will go perfectly with meat with character!
