
Asparagus, poached eggs and smoked salmon tartines

- 4 beautiful slices of country bread
- 1 bunch of green asparagus
- 4 eggs
- 4 slices smoked salmon
- 1 Lemon
- 5 sprigs of chives
- 1 tbsp. Vinegar
- 3 tbsp. tablespoons olive oil
- Salt
- Pepper
- Cut off the stems of the asparagus, rinse them and steam them for 10 minutes.
- Meanwhile, poach the eggs for 3 minutes in a pan of simmering water (proceed in several batches). Take the eggs out of the water using a slotted spoon then trim them.
- For the vinegar into a small bowl, season with salt and pepper and whisk with the oil. Add the rinsed and chopped chives.
- Lightly toast the bread slices. On each slice, spread some green asparagus, smoked salmon and place a poached egg on top.
- Serve immediately, with the vinaigrette and the lemon cut into slices.
