
Avocado and mozzarella salad

- 8 Coles water crackers
- 200 g plum tomatoes or roma tomatoes
- Pinch of salt
- Freshly ground black pepper
- 2 garlic cloves, peeled and thinly sliced
- 2 spring onions, trimmed and finely chopped
- 3 tablespoons of olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons capers, drained
- 125 g Coles bocconcini, torn in half
- 1 handful of basil, coarsely chopped
- 2 avocados, quartered
- Preheat the grill, place the tomatoes on a baking sheet, season with salt and pepper, sprinkle with garlic and spring onions, drizzle with olive oil. Place under the broiler for 4-5 minutes until the tomatoes begin to soften and the garlic is golden.
- Place the hot tomato mixture in a bowl, add the vinegar, capers, cheese and basil, stir and set aside.
- Peel, pit and quarter the avocados, place 2 avocado quarters on each plate.
- For the tomato mixture over the avocado wedges and drizzle with balsamic vinegar and serve. (If making ahead for lunch, squeeze a little lemon juice over the avocado wedges to keep them from browning.)
