Avocado with rice salad

- 2 Lawyers
- 1 carrot
- 1 shallot
- 0.5 Lemon
- 20 g Rice
- 1 tbsp. Mustard
- 1 tbsp. Vinegar
- 3 tbsp. tablespoons olive oil
- Salt
- Pepper
- Cook the rice in boiling salted water for 20 minutes, drain and let cool.
- Open the avocados and scoop out the flesh with a small spoon, cut into small dice and sprinkle with lemon juice. Peel and finely chop the shallot. Peel the carrot, and grate it.
- In a bowl, mix the mustard, shallot, vinegar and oil, salt and pepper.
- In a salad bowl, combine the rice, avocado, carrot and shallot sauce. Garnish the avocado shells with the rice preparation and serve chilled.
