- 110 g Unsalted butter
- 225 g caster sugar (or brown sugar)
- 3 eggs
- 4 to 5 very ripe bananas
- 90 ml Milk
- 1 tbsp. baking soda
- 1 pinch Baking powder
- 1 spoonful of liquid vanilla
- 280 g Fluid flour
- 100 g Pecans, halved
- 2 heaping tablespoons of spread
- Preheat the oven to 180°C.
- In a bowl, melt the butter.
- Add the powdered sugar and whisk until the mixture whitens and is smooth.
- Add beaten eggs, mashed bananas, yeast, baking soda, milk and liquid vanilla.
- Mix again so that everything is homogeneous.
- Cut the pecans in half and for into the batter. Add the flour and mix again, the dough should be very smooth.
- Finally, add the two tablespoons of spread, stir but without mixing completely.
- For into a buttered cake tin covered with parchment paper not too big (the cake will not rise too much because there is very little yeast).
- Bake for 45 minutes to 1 hour, monitoring the cooking.
