Basmati rice with curry, zucchini, cucumber and red cabbage

- 200 g Rice
- 1 tbsp. tablespoons olive oil
- 1 tbsp. ground curry
- 1 zucchini
- juice of ½ lemon
- 0.25 Red cabbage
- 1 tbsp. balsamic vinegar
- 0.5 Cucumber
- 1 red onion
- 10 g Young shoots
- 1 tbsp. coffee Black sesame seeds
- Bring a pot of salted water to a boil and cook the rice according to the directions on the package. Drain it and mix it with the olive oil and ground curry.
- Cut the zucchini with a spiralizer (or peeler).
- Divide between bowls, rice and zucchini, then drizzle with lemon juice.
- Slice the red cabbage with a mandolin (or a knife) and fry for 12 minutes with the balsamic vinegar. Add it to the bowls.
- Slice the cucumber and onion into rings, add them, then arrange a few young shoots and sprinkle with black sesame seeds.
