
Beef Stuffed Potatoes

- 8 large potatoes (bintje)
- 300 g ground beef
- 150 g minced pork loin
- 2 shallots
- 2 cloves garlic
- 1 egg
- 3 slices of bread
- 10 cl of milk
- 1/2 bunch of parsley
- 3 tbsp. oil soup
- 1/2 broth tablet
- nutmeg
- salt pepper
- some button mushrooms (optional)
- Prepare the stuffing: finely chop the shallots, the garlic cloves and the parsley, slice the button mushrooms.
- Soak the breadcrumbs in the milk and squeeze them out.
- In a bowl, mix the two ground meats with the previous ingredients. Season with salt, pepper, grated nutmeg and mix well.
- Preheat the oven to th. 7 (210°C).
- Peel the potatoes. Rinse them and pat them dry. Cut each in half lengthwise and scoop out each half with a small spoon.
- Fill the potato halves with stuffing and reform into whole potatoes. Tie them up to keep them tightly closed.
- Heat the oil in an ovenproof casserole dish. Add the stuffed potatoes to brown on all sides, turning them over carefully with a spoon.
- Then pour 25 cl of broth prepared with the tablet into the casserole dish (the broth must be hot). Cover and bake in the oven for 1½ hours.
- Remove the string when serving and serve with a green salad.
