- 2 duck breasts
- 10 black currants
- 20 cl of water
- 6 tbsp. tablespoons creme de cassis
- 2 tbsp. balsamic vinegar
- 2 tbsp. liquid honey
- 2 tbsp. liquid honey
- Salt pepper
- Pour the crème de cassis into a saucepan then add the honey and vinegar. Season to your taste.
- To add texture, add the fresh black currants. Reduce over high heat then add the water.
- It will dilute the preparation and reduce the taste of sugar, so adjust the amount of water to your taste. Let reduce over low heat for about 20 minutes.
- The preparation should resemble a syrup.
- While the sauce is simmering, preheat your oven th.6 (180°C).
- Cut the skin of the duck breasts and season them to your liking.
- In a frying pan, without fat and over low heat, brown them skin side down for 6 minutes.
- When the duck begins to brown, turn them over and caramelize each side over a higher heat.
- Place in a baking dish and bake for 5 mins.
- Cut the duck breasts, place them in a serving dish and cover with blackcurrant sauce!
