Boiled egg with lamb’s lettuce

- 4 extra fresh eggs
- 200 g Lamb's lettuce
- 0.5 Bunch of chives
- 2 slices of bread
- 10 cl Liquid cream
- 20 g Butter
- Salt
- Pepper
- Preheat the oven th 6-7 (200°C). Butter 4 ramekins, salt, pepper.
- Clean the lamb’s lettuce and immerse it for 1 second in salted boiling water. Drain it carefully. Mix it with the cream, salt, pepper.
- Crack the eggs into the ramekins and cover them with the cream of lamb's lettuce. Bake for 10 minutes in a bain-marie.
- Butter the slices of bread and brown them for a few minutes in the pan. Sprinkle with chopped chives and cut them into thin slices. Serve immediately with the eggs.
