Brandade of whiting with sweet potatoes

- 400 g skinless whiting fillets
- 50 cl Vegetable broth
- 4 sweet potatoes
- 2 cloves Garlic
- 80 g Butter
- 15 cl Milk
- 2 Cm ginger
- 3 tbsp. breadcrumbs
- Salt
- Pepper
- Peel the sweet potatoes and cut the flesh into cubes.
- Peel the garlic cloves.
- Place the cubed sweet potatoes and garlic cloves in a pan of cold salted water. Cook for 20 minutes from the boil.
- Peel the ginger and strain it through a micrograter to remove the pulp.
- Drain the sweet potato cubes and garlic cloves.
- Heat the milk in a saucepan.
- Mash the sweet potato cubes and garlic cloves with a fork.
- Add the chopped butter, ginger pulp, boiling milk, salt and pepper. Mix until you obtain a homogeneous purée.
- Check that your whiting fillets have no bones. If not, remove them with a pair of bone-cutters.
- Heat the vegetable stock in a saucepan.
- When the liquid boils, add the whiting fillets and poach for 6 minutes.
- Drain the fillets and remove the flesh.
- Line the bottom of a baking dish with the whiting meat.
- Cover with a layer of sweet potato purée.
- Sprinkle the surface with breadcrumbs.
- Place under the broiler for 5 minutes.
