- 500 g black beans
- 150 g smoked pork sausage
- 150 g smoked pork sausage, salted
- 250 g beef jerky
- 1 salt pork tail
- 1 salt pork trotter
- 1 salt pork ear
- 250 g pork chop
- 150 g salt pork loin
- 50 g smoked bacon
- 2 tbsp oil
- 1 onion
- 3 cloves of garlic
- 3 bay leaves
- 1/4 cup chopped parsley
- 1/4 cup chopped chives
- 1 dose of cachaca
- 1 orange
- Cut into cubes the pig's trotter, ear, tail, beef, pork ribs, etc.
- Soak everything in cold water for at least 12 hours. Change the water regularly. Also soak the black beans for 12 hours in cold water.
- Boil the meats in water (sausages, sausage, tail, feet, ear, loin, bacon), in order to eliminate the fat, 5 to 8 minutes. Remove.
- Cut meats and sausages into pieces.
- Put the black beans and these meats in a pot, cover with water. Let it cook for an hour. Remove the meats.
- Add the other meats (chops, dried beef), cook for 2 to 3 hours.
- Add water if necessary.
- Fry the garlic and the minced onion in a pan, with the bay leaf.
- Add this mixture to the Feijoada which is cooking. Then add the chives and parsley.
- Add the orange and the cachaça. Leave to simmer.
- Before serving, add the meats left to rest (sausages, etc.)
- Serve with rice
