
Breadsticks with sesame and poppy seeds

- 230 g flour
- 7 g salt
- 15 g fresh yeast
- 130 ml water
- 30 ml of olive oil + 2 tablespoons of olives
- Sesame seeds
- Poppy seeds
- Start by preparing the breadstick dough. Dissolve the yeast in the water. In the bowl of your robot, mix the flour and salt.
- Add the water containing the yeast and start kneading your dough. Then add the olive oil while continuing to knead.
- Continue kneading the breadstick dough for about 7 to 8 minutes.
- Roll out the dough to form a rectangle of about 40 cm x 20 cm, 1 cm thick, and place it on the baking sheet.
- Brush it with olive oil using a pastry brush.
- Preheat your oven to 30°C then bake after turning off the oven for one hour, so that the dough rises, as for pizza dough.
- After an hour, take out the risen dough and cut it into strips 1 cm wide.
- Stretch and fold each strip in half lengthwise. Then twist the two layers together to form the breadsticks.
- Prepare two plates, one containing the sesame seeds, the other the poppy seeds.
- Roll the breadsticks in sesame seeds or poppy seeds and place them on a baking sheet lined with parchment paper.
- Leave to rise for another 10 minutes.
- Preheat your oven to 200°C and bake for 15 to 20 minutes.
- Let the breadsticks cool before eating them as an aperitif!
