
Brussels sprouts with small onions

- 600 g Fine Brussels sprouts (about 30)
- 20 spring onions
- 15 thin slices smoked breast
- 60 g Butter
- Salt
- Ground pepper
- Clean the cabbages and wash them in several waters. Peel the onions.
- Scald the onions for 2 minutes in a pan of water.
- Remove them with a skimmer and refresh them, drain them.
- Replace them with Brussels sprouts, let blanch for 3 minutes. Rinse and drain them.
- Bring another pan of water to the boil, add the cabbage and cook for 15 minutes. Rinse them, drain them well.
- Heat the oven to th. 8 (240°C). Melt the butter.
- Cut the breast slices in half. Wrap half a slice tightly around each cabbage.
- Place the cabbage and onions in a large deep oven dish. Pepper, sprinkle with melted butter (without the deposit).
- Slide the dish into the oven and cook for 10 to 15 minutes, stirring carefully several times.
