- 1 C. A s. Barley miso
- about 800 ml of hot water
- 12 medallions (medium) of textured soy protein
- 2 onions
- olive oil
The spice mix :
- 2 tbsp. A c. Whole sugar
- 2 tbsp. A c. Garlic powder
- 3 tbsp. A c. paprika
- 2 tbsp. A c. Dried oregano
- 2 tbsp. A c. Dried thyme
- 1 C. A c. Black pepper powder
- ½ tsp. A c. Salt
- ½ tsp. A c. Cayenne pepper powder
- In a bowl, combine the ingredients for the spice mix. It can be stored in a small jar or spice jar.
- In a salad bowl, mix the miso and 2 teaspoons of the spice mix, then for the water little by little to mix well.
- Rehydrate the soy medallions for about 15 minutes. Drain them well.
- Cut the onions into pieces. Assemble the skewers by alternating medallions of soy and onions.
- In a small bowl, mix 1 tablespoon of olive oil with 1 tablespoon of the spice mix, then brush the medallions without excess (the oil should not drip).
- Brown the medallions on the barbecue, a few minutes on each side.
- Version without barbecue: cook the medallions in a grill pan or on the plancha.
