
Carrot croquettes

- 8 medium organic carrots
- 1 large potato
- 2 organic vegetable stock cubes
- 3 tbsp. at s. olive oil from Provence
- 2 eggs
- 1 glass of flour
- Cornflake breadcrumbs
- Cumin
- Salt and pepper
- smoked paprika
- Grape seed oil for cooking
- Wash and peel the vegetables.
- Cut them into big chunks.
- Cook in water with two cubes of organic vegetables, for 20 to 30 minutes.
- Drain and mash the vegetables, keeping a few pieces with the olive oil, cumin, pepper, smoked paprika and salt.
- Adjust the seasoning and leave to cool.
- Prepare three soup plates with the flour, beaten eggs and cornflake crumbs.
- Wet your hands and form the croquettes.
- You can also prepare your croquettes using two tablespoons.
- Roll each carrot croquette in the flour then in the beaten egg and finally in the breadcrumbs then arrange them on a plate.
- Heat the oil in a large skillet.
- Place the carrot croquettes and let them brown for a minute on each side.
- Then place them on the absorbent paper and serve immediately with homemade or organic ketchup.
