- 4 pork chops
- 2 Onions
- 0.5 Glass of dry white wine
- 0.5 glass of beef broth
- 1 tbsp. tablespoons tomato puree
- 40 g Butter
- 1 tbsp. Mustard
- 4 pickles
- 1 tbsp. chopped chives
- Salt
- Pepper
- Finely chop the onions. Sweat them without coloring for 4 to 5 minutes in a saucepan with 20 g of butter. Salt, pepper. Add the tomato puree. Stir, then add the white wine and broth. Let reduce over low heat for about 10 minutes.
- Meanwhile, cook the pork chops in a pan in 20 g of butter. Keep warm.
- When the sauce has reduced well, add the sliced gherkins and the mustard.
- Add the pork chops, adjust the seasoning, mix and heat
additional mins. - Sprinkle with chopped chives and serve immediately.
