Cherries in verbena syrup

- 1 kg Cherries
- 1 Lemon
- 1 bunch of verbena
- 125 g Sugar
- Put 25 cl of water in a saucepan with the sugar, lemon juice and verbena leaves.
- Slowly bring to the boil and let the syrup infuse for 10 minutes, covered, off the heat.
- Filter it and let it cool.
- Quickly wash the cherries, stem them and pit them.
- Put them in a dish and pour over the very cold syrup.
- Cover with cling film and leave in the fridge for 30 minutes.
- Arrange the cherries in cups or small jars and decorate with verbena leaves. Serve very chilled.
