- 500 g Chicken breasts
- 1 Tomato
- 1 onion
- 1 tbsp. tablespoons Oil
- 2 tbsp. coffee Curry
- 20 cl coconut milk
- Cut the chicken breasts into cubes. Peel and chop the onion. Rinse the tomato and cut it into cubes.
- Heat the oil in a sauté pan and sweat the onion. Add the chicken cubes and brown them on all sides. Salt, pepper, sprinkle with curry and mix well.
- Add the diced tomatoes, for in the coconut milk and simmer for about 20 minutes. Serve hot, with rice.
Tip: you can add a small diced red pepper.
