- 1 egg
- 125 grams of flour
- 150 grams of honey
- 60 milliliters of lukewarm milk
- 50 grams of sugar
- 1/2 teaspoon baking powder
- 5 grams of 4 spice mix
- 200 grams of dark chocolate
- 275 grams of full cream
- 50 grams of sugar
- 125 grams of mascarpone
- 3 sheets of gelatin
- 250 grams of red fruits
- 25 grams of sugar
- 5 grams of NH pectin
- 75 grams of water
- 6.5 sheets of gelatin
- 150 grams of sugar
- 150 grams of glucose
- 100 grams of sweetened condensed milk
- Q.S of red food coloring (gel or powder)
- Mix the flour, sugar, yeast and the 4-spice mixture.
- Add honey, lukewarm milk and egg. Mix well.
- For the mixture into a buttered domed mold and bake for 1 hour at 160°C.
- Hydrate the gelatin sheets in cold water for ten minutes.
- Melt the dark chocolate and 1/3 of the cream separately.
- Mix the melted chocolate, 1/3 of the boiling cream. Then add the gelatine sheets
- Whip the cream.
- Add the chocolate/cream/gelatin mixture delicately using a spatula.
- Chill for at least 2 hours.
- Mix the sugar and NH pectin
- For in the sugar, the NH pectin and the red fruits and bring to the boil for at least 1 minute.
- Blend with an immersion blender
- Leave to cool in the refrigerator
- Heat the sugar, glucose and water.
- Chop the white chocolate.
- For the boiling mixture over the white chocolate and whisk.
- Add gelatin, sweetened condensed milk and red food coloring and mix well.
- Blend with an immersion blender
- Wait until the mixture is at 25°C.
- Put the gingerbread in the mold.
- Pipe chocolate mousse. Smooth using an angled spatula
- Add candied red fruits and whole red fruits
- Add chocolate mousse. Smooth well with a spatula
- Put in the freezer overnight
- The next day, for the glaze, which is at 25°C, over the frozen entremet on a wire rack.
- Put in the fridge for 6 hours and enjoy!
