Christmas eggnog and its shortbread man
Ingredients

FOR THE EGG NUGGET :
- 40 cl of milk
- 4 egg yolks
- 4 tbsp. liquid honey
- 1 pinch of cinnamon
- A few drops of white rum
FOR THE SHORTBREAD :
- 50 g sugar
- 75 g soft butter
- 5 c. rounded tablespoons of flour
- 1 egg yolk
- 1 C. ground cinnamon
- 1/2 tsp. water
- 1 pinch of salt
FOR DECORATION :
- 1 egg white
- Melted white chocolate
For the shortbread :
- Preheat the oven to 200°C.
- Whisk the egg yolks with the sugar, soft butter and cinnamon. Gradually add the flour and mix well.
- When the dough is smooth, spread it out on a baking sheet lined with baking paper. Cut out figures using a cookie cutter.
- Place these men in mini-tart molds, pressing lightly to give them a hollow shape.
- Save the scraps and place them on one side of the baking sheet or in the remaining moulds.
- Bake for around 10 mins.
- Remove from the oven, let cool. Then coarsely chop the cookie scraps.
- For the egg white into a bowl. Dip the edges of the glasses in it for about 1 cm, then roll them immediately in the biscuit crumbs. Let dry.
- Decorate the shortbread with melted white chocolate.
For the eggnog :
- In a bowl, vigorously whisk the egg yolks with the honey for several minutes.
- For the milk, rum and cinnamon into a saucepan. Heat while stirring without boiling.
- Off the heat, add the mixture to the egg yolks. Whisk well and for into prepared glasses.
- Place a man on each glass and serve immediately.
