Ingredients

- 125 g flour
- 70 g softened butter
- 50 g sugar
- 1 egg yolk
- 1 pinch of salt
- Cinnamon powder
- Icing sugar
- Cocoa Powder
- In a bowl, mix the butter with the egg yolk.
- Add the sugar, flour, salt and cinnamon (about ½ tsp, more or less depending on your taste). Mix until you get a smooth paste.
- Knead, form a ball, then wrap it in cling film and set aside for 1 hour in the fridge.
- Preheat the oven to 180°C (th.6).
- Roll out the dough to 1 cm thick on a floured work surface, then cut out ovals using a cookie cutter.
- Place them on a baking sheet lined with parchment paper.
- Using a spoon, draw quails on the cookies.
- Then poke a hole at the top of each with a knitting needle or a wooden pick.
- Bake for about 15 minutes, until the cookies are golden brown.
- Once out of the oven, enlarge the hole if necessary.
- Sprinkle lightly with cinnamon, icing sugar and cocoa, then leave to cool.
- Slip ribbons into the holes when the cookies have cooled!
