Cod accras with potatoes

- 200 g Desalted cod meat
- Cooked in boiling water
- 300 g Flour
- 25 cl Water
- 3 mashed potatoes
- 1 tbsp. baking powder
- 1 onion
- 1 garlic clove
- 0.5 Bunch of parsley
- 0.5 West Indian pepper
- 0.5 Lime
- Salt
- Pepper
- Frying oil
- Peel the potatoes and cook them for 30 minutes in plenty of water. Drain them and then mash them.
- Crumble the cod meat into a large bowl. Chop the onion, garlic and parsley, as well as the pepper stripped of its seeds, and add everything to the cod meat.
- In another container, prepare the dough: forr the flour then form a well in the center. Gradually add the water, while mixing gently. When the paste is homogeneous, incorporate it into the cod meat, add the crushed potatoes and mix thoroughly.
- Sprinkle the baking powder, then squeeze the lime. Mix gently, incorporating the rest of the batter. Reserve 30 min at room temperature.
- Heat the oil in a fryer. Take a teaspoon of the paste and dip it in the oil. If it begins to fry instantly, the oil has reached the correct temperature (about 180°C).
- Form small donuts with 2 tbsp. coffee, and plunge them into the hot oil. Let them brown for a few minutes, then drain them and place them on absorbent paper.
- Enjoy the hot accras.
