Cod en papillote with ginger butter

- 4 Cod fillets
- 1 head of broccoli
- 80 g Semi-salted raw butter
- 3 cm of fresh ginger
- 1 small garlic clove
- 1 tbsp. Espelette pepper
- Salt
- Divide the broccoli into florets and cook them for about 5 minutes in salted boiling water, keeping them very crunchy.
- Drain them carefully.
- Preheat the oven to th. 6 (180°C). Let the butter soften then work it with the grated ginger, the pressed garlic and the chilli.
- Cut 4 large squares of parchment paper. Spread the broccoli florets and the cod fillets on top.
- Add a large piece of flavored butter and fold the edges several times to close the papillotes hermetically.
- Slide the papillotes into the oven and cook for 15 minutes. Put them on plates and let the guests open them.
