Cod steaks with lemongrass and coriander

- 4 cod fillets
- 50 cl of fish court-bouillon
- 1 stalk lemongrass
- 4 sprigs of cilantro
- juice of 1 lemon
- 1 clove of garlic
- 30g butter
- 1 tbsp. crushed 5 berry mix
- 1/2 tsp. teaspoon fleur de sel
- Peel the lemongrass and cut it into chunks. Peel the garlic clove. Rinse, pat dry and chop the cilantro.
- For the lemon juice, garlic, lemongrass and coriander into a sauté pan with the court-bouillon. Heat for 10 mins.
- Add the cod fillets and cook for 7 to 8 minutes.
- Serve the fish steaks drizzled with filtered cooking juices and topped with a knob of butter. Serve immediately sprinkled with fleur de sel and crushed 5-berry mix.
