Couscous shrimp salad

- 250 g yellow and red cherry tomatoes
- 200 g medium semolina
- 200 g prawns
- 200 g feta
- 4 small spring onions with their stems
- Juice of 3 lemons
- 4 tbsp. roasted pine nuts
- 2 tbsp. chopped dill
- 2 tbsp. tablespoons chopped cilantro
- 2 tbsp. tablespoon chopped mint leaves
- 10 cl of olive oil
- a little chilli powder
- Salt pepper
- Wash the semolina in cold water then put it in a bowl, cover it with cold water and let it soak for 10 minutes.
- Meanwhile, cut the tomatoes in half.
- Finely chop the onions and their stems.
- Drain the semolina.
- Put it back in a bowl, add the tomatoes, onions, coriander, mint, dill, olive oil and lemon juice, salt and pepper.
- Mix well.
- Add the shelled prawns and roasted pine nuts. Sprinkle with chili powder.
- Place at least 2 hours in the fridge. Serve well chilled.
