
Crispy endive, salmon and ricotta mousse

- 3 chicory
- 300 g Smoked salmon
- 350 g Ricotta
- 30 cl Whole liquid cream
- 1 small bunch of dill
- a few sprigs of chervil
- 1 tbsp. tablespoons Golden sesame seeds
- Salt
- Pepper
- Cut the end of the endives, thin them delicately, rinse them under cool water and dry them on absorbent paper. Wash and thin the herbs. Finely chop the dill. Cut the salmon into thin strips.
- Pour the ricotta into a large bowl, salt, pepper and add the dill. Whip the very cold cream into a firm whipped cream and add it to the ricotta, gently lifting the mixture. Adjust the seasoning if necessary. Dump everything into a pocket fitted with a star tip.
- Book cool.
- Pipe a nice quenelle of ricotta mousse on each endive leaf. Add a slice of salmon and sprinkle with sesame seeds. Decorate with a sprig of chervil and serve as an aperitif.
