Crispy red mullet with pepper coulis

- 18 Boneless red mullet fillets
- 2 red peppers
- 1 fresh tomato (or canned)
- 3 garlic cloves, peeled
- 1 small bunch of fresh cilantro (optional)
- 1 tbsp. tablespoon shredded tomato puree
- 1 tbsp. tablespoons olive oil
- Salt
- Pepper
- For the coulis : put the peppers cut into pieces and the tomato into quarters in a saucepan with the garlic, the tomato puree and 10 cl of water.
- Salt and cook for 20 minutes covered.
- At the end of cooking, there should be very little water left, just enough to bind the coulis. Let cool.
- Mix the coulis with the coriander. Pepper and adjust the seasoning. Add a drizzle of olive oil.
- Brush the red mullet fillets with oil.
- Place them, skin side up, on a baking sheet lined with parchment paper. Place them under the broiler for 1 minute.
- Place the red mullet fillets on the coulis and serve with polenta or tagliatelle.
