Curry Chicken Meatballs

- 4 chicken breasts
- 2 garlic cloves
- 0.5 white onion
- 1 Lemon
- 1 tbsp. coffee Curry
- 1 knob of fresh ginger
- 1 egg
- 1 tbsp. tablespoons chopped cilantro
- 2 tbsp. tablespoon grated coconut
- 1 tbsp. tablespoons fresh cream
- 12 cl peanut oil
- Salt
- Pepper
- Peel the garlic and onion and chop them finely. Peel the ginger and chop it.
- Chop the chicken breasts and put the meat in a terrine, with the whole egg, onion, garlic, ginger, coriander, 1 tbsp. grated coconut, lemon juice and fresh cream. Season with salt, pepper and curry. Mix carefully to obtain a homogeneous stuffing.
- Heat the oil in a skillet. Form balls the size of a walnut with the previous preparation and cook them for 3 to 4 minutes, turning them several times so that they are cooked evenly. Drain them on absorbent paper and lay them out on a platter.
- Sprinkle with grated coconut and serve immediately with basmati rice and a cream sauce seasoned with green curry.
