Curry Skate Wings

- 1.2 kg Skinned skate wing (without skin)
- 3 Onions
- 20 cl Cream
- 10 cl dry white wine
- 21 tbsp. coffee Curry
- 50 g Butter
- Salt
- Pepper
- Preheat the oven to th. 7/8 (230°C). Rinse and pat dry the skate wing pieces.
- Peel and chop the onions. Scatter them in a buttered baking dish. Place the ray pieces on top, salt and pepper.
- Add the white wine and the rest of the butter in pieces. Bake for 5 minutes in the oven.
- Remove the ray pieces from the dish. Add the cream and the curry to the juice, let reduce to bind the sauce, then check its seasoning.
- Return the ray pieces to the dish. Sprinkle them with sauce and return to the oven for 2 minutes while still hot. Serve with lemon or lime wedges and rice.
