Detox Beet Soup

- 6 Beets
- 4 Carrots
- 2 Onions
- 4 garlic cloves
- 2 Leeks
- 2 tbsp. tablespoon Rapeseed oil
- 1 liter mineral water
- 2 pinches Salt
- 1 tbsp. oat bran
- 1 tbsp. tablespoon sunflower seeds
- 6 tbsp. coffee soy cream
- Place the unpeeled beet roots in a saucepan, cover with water, bring to a boil and then simmer for 30 minutes until tender.
- Drain the water and let cool.
- Heat the oil in a cast iron skillet, add the onions, garlic, leeks, carrots and cook for 10 minutes over low heat. Then add the liter of mineral water and cook until tender. Remove from heat and set aside.
- Peel the beets, cut them into cubes and add to the blender, along with the cooked vegetables and the cooking broth. Blend until you get a smooth cream. Season with salt and serve garnished with soy cream and the mixture of seeds and oat bran.
