Duck breast with orange
Ingredients

- 3 breasts
- 3 oranges
- juice of 2 oranges
- zest of 1 orange
- salt and pepper
- With a finely sharpened knife, remove the fat from the duck breasts, leaving about 1 mm.
- Cut the fat from one of the duck breasts into small dice of a few millimeters and discard the others.
- In a casserole dish, melt the cubes of fat over very low heat.
- Remove any pieces that have not melted with a skimmer.
- Peel the three oranges and cut them into slices.
- Poach the orange slices in the casserole dish for 3 minutes.
- In an ovenproof dish, place the duck breasts fat side up. Salt.
- Spread the orange pieces around and add the juices of the other two oranges.
- Put under the broiler of the preheated oven (10 min) for 6 minutes.
- Turn off the grill and set the oven to 100°C.
- Remove the duck breasts to the cutting board and return the baking dish to the oven for 2 or 3 minutes unless the guests like very rare duck breast.
- Cut the duck breasts into thin slices and put them back in the baking dish with their juices.
- Serve quickly on hot plates.
