Easy Chicken Quiche

- 1 shortcrust pastry
- 200 g Chicken breast
- 3 eggs
- 1 tbsp. tablespoons olive oil
- 1 shallot
- 15 cl Liquid cream
- 1 small bunch of parsley
- 1 tbsp. cumin seeds
- 40 g Emmental cheese
- Salt
- Pepper
- Cut the chicken breast into large cubes. Heat the oil in a frying pan and sweat the peeled and minced shallot. Add the chicken cubes and brown them on all sides. Salt, pepper, sprinkle with cumin and mix.
- Preheat the oven to 180°C (th.6). Roll out the shortcrust pastry and fill a pie pan with it. Prick with a fork .
- Spread the chicken cubes over the dough. In a bowl, whisk the eggs with the cream. Salt and pepper and add the grated Emmental cheese and half the chopped parsley. For this mixture over the dough.
- Bake for around 35 mins. Sprinkle with the remaining parsley and serve warm or cold.
- Tip: you can add 1 tbsp. coffee curry.
