Easy zucchini quiche

- 1 shortcrust pastry
- 2 courgettes
- 1 onion
- 2 eggs
- 10 cl Milk
- 15 cl fresh cream
- Nutmeg
- Olive oil
- Salt
- Ground pepper
- Preheat your oven to 180°C (th. 6). Wash the courgettes and cut them into slices. Peel the onion and chop it.
- In a non-stick pan, heat 2 tbsp. tablespoon olive oil. Brown the onion for a few minutes then add the zucchini and cook over medium heat for 10 to 15 minutes. Drain and reserve.
- In a bowl, beat the eggs into an omelette. For in the milk and fresh cream. Add the nutmeg, salt and pepper. Mix everything well.
- Unroll the dough in a pie pan then prick the bottom with a fork. Place the zucchini in a rosette then for the egg mixture. Bake for approximately 30 to 35 minutes.
- Tip: for a more gourmet version, add grated goat cheese or Gruyère cheese to your mixture.
