- 500 minced lamb
- 2 eggplants
- 2 zucchini
- 2 small tomatoes
- 1 ball of mozzarella
- 4 tbsp. olive oil
- 2 cloves garlic
- fresh basilic
- ground cumin
- salt pepper
- In a skillet, for 2 tbsp. tablespoon olive oil. When it is very hot, place the ground lamb and cook it, stirring regularly. Add the pressed garlic, cumin, a pinch of salt and pepper.
- Wash and dry the tomatoes, aubergines and courgettes. Cut them into cubes, drizzle with the remaining olive oil, salt and pepper. Place them in a microwave-safe dish. Cook them for 5 minutes at maximum power.
- Arrange the cooked vegetables in 4 ramekins. Cover them with ground lamb and a slice of mozzarella. Place them for 1 minute under the grill of the microwave. Decorate with basil and serve immediately.
