Filet mignon of pork with mustard stuffed with mushrooms in a crust

- 1 beautiful filet mignon of about 600 g
- 500 g Paris mushrooms (you can also choose mushrooms of your choice)
- 5 Carrots
- 1 onion
- 0.5 Bunch of parsley
- 125 g Ricotta
- 1 tbsp. coffee Veal stock
- Salt
- Pepper
- 1 puff pastry
- pure butter
- 40 g + 40g + 20g butter
- 1 egg yolk
- 4 tbsp. Old fashioned mustard
- 30 cl Liquid cream
- Cut the tails of the mushrooms and reserve 250 g.
- Cut the remaining 250 g into very small pieces.
- Peel the carrots and the onion then cut them into very small pieces as well.
- In a frying pan, melt the butter (40 g), add the mushrooms, carrots and onion cut into small pieces.
- Chop the parsley, add it to the vegetables. Salt, pepper and add two tablespoons of old-fashioned mustard.
- Cook for about 20 minutes, stirring occasionally, and let cool. Then add the ricotta and mix well.
- Cut your filet mignon in half without going all the way lengthwise.
- Stuff the inside with the mushroom stuffing and tie it in several places so that the stuffing does not escape.
- In a frying pan over medium heat, melt the butter (40 g) and place the filet mignon, salt and pepper.
- Sprinkle with veal stock, brown well on all sides for about 15 minutes.
- Drain on a wire rack or on absorbent paper and leave to cool.
- Preheat the oven to 190°C.
- Unroll the puff pastry, place the filet mignon on top, wrap the roast in the pastry, welding with a brush and water. Place on a baking sheet.
- Beat the egg yolk with a little water and brush the entire surface of the puff pastry. Bake for 20 minutes.
- At the end of this time raise the oven to 200°C and cook for another 7 to 10 minutes.
- Prepare the sauce: in a frying pan, melt 40 g of butter, add the remaining mushrooms cut in half, salt and pepper.
- Add the mustard and cook for about 12 to 15 minutes. Add the cream and put on very low heat.
- Cut the filet mignon into slices of about 3 cm (with a serrated knife). Arrange on plates and serve with the sauce.
