
Finnish Porkkanalaatikko

- 1 kg of carrots
- 30 cl of round dessert rice
- 1 liter of milk
- 4 eggs
- 1 stock cube
- Granulated sugar
- nutmeg powder
- butter
- salt pepper
- Peel and dice the carrots.
- Cook them in a pot of boiling water with the bouillon cube added, over high heat, until tender (about 15 minutes).
- At the end of this time, separate the water from the diced carrots. Reserve the diced carrots in a salad bowl.
- Return the water to the pan and add the rice. Cook over medium heat until the rice has absorbed all the water.
- When the water is absorbed, add the milk and a good chunk of butter. Cook until the mixture is sticky.
- Coarsely crush the diced carrots in the salad bowl, then add the whole eggs and a little sugar and nutmeg powder. Salt and pepper to taste.
- Then add the rice mixture and mix well. Adjust the seasoning if necessary.
- Preheat the oven to 180°C.
- Butter a baking dish and spread the mixture on it. Dot the top with knobs of butter.
- Bake for 1 hour until the surface is golden brown.
- Let cool when removed from the oven before serving.
