
Fried mackerel with herb sauce

- 4 mackerel fillets (200 g each)
- 1 Lemon
- 3 tbsp. Flour
- 30 g Butter
- Salt
- Pepper
for the sauce:
- 0.5 Bunch of chives
- 4 sprigs of parsley
- 2 sprigs of dill
- 1 sprig of tarragon
- 2 anchovy fillets
- 80 g Fromage blanc type cottage cheese
- 250 g fresh cream
- Salt
- Pepper
- Rinse the mackerel fillets then pat them dry with paper towel.
- Sprinkle the fillets with the lemon juice, salt them, pepper them and put them in the fridge for 10 minutes.
- Meanwhile, prepare the sauce: wash and spin dry the herbs. Discard the parsley and tarragon stems.
- Slice all the fine herbs using scissors and mix them.
- Crush the anchovy fillets to reduce them to a puree. Then add them to the cottage cheese and fresh cream.
- Add the chopped herbs. Season with pepper and taste the sauce before adding salt.
- Heat the oil and butter in a large skillet.
- Pass the mackerel fillets in the flour and tap them to remove the excess.
- Put the fillets to cook in the very hot butter-oil mixture.
- Count about 3 to 4 minutes on each side depending on the thickness of the fish.
- Drain the fillets between two sheets of paper towel, before placing them in a hot serving dish.
- Accompany with steamed potatoes and serve the sauce separately in a sauce boat.
