- 6 free-range chicken breasts
- 3 heads of garlic
- 1 tbsp. Thyme
- 2 tbsp. Paprika coffee
- 1 pinch Turmeric
- 1 Glass of dry white wine
- Olive oil
- Salt
- Pepper
- In a deep dish, place the chicken breasts. Drizzle with olive oil and add the spices. Salt, pepper and mix. Leave to marinate for 1 hour.
- Detach the garlic cloves, taking care to keep the last skin to protect them during cooking.
- Heat a large non-stick pan and brown the chicken breasts on all sides for 2 to 3 minutes. Deglaze with the white wine then add the marinade and cook over medium heat.
- In a small non-stick skillet, heat 2 tbsp. tablespoon olive oil. Add the garlic and cook over very low heat, stirring regularly. Check the cooking with a fork, the pods should crush easily into a puree.
Tip: Serve hot with cream tagliatelle.
