- 200 g Raclette cheese
- 100 g smoked bacon
- 3 eggs
- 20 cl thick fresh cream
- 100 + 10g Butter
- 200 g Flour
- 1 pinch Nutmeg
- Salt
- Pepper
- In a bowl, put the flour, add 100 g of butter in small pieces, work with your fingertips to obtain a sandy mixture.
- Make a well in the center, add 1 pinch of salt and 5 cl of water.
- Mix then form a ball of dough. Flour it and let it rest for 30 minutes.
- Cut the smoked breast into small lardoons and melt them gently in a pan without letting them brown.
- Drain them on absorbent paper.
- In a salad bowl, beat the eggs in an omelet, add the cream, pepper and nutmeg.
- Preheat the oven to th. 7 (210°). Butter a pie pan and line it with pastry.
- Place the bacon bits, cover with the egg mixture and then sliced raclette cheese.
- Bake 30 mins.
