Homemade cheese ravioli

- 350 g Flour
- 3 egg yolks
- 4 cl Warm water
- 3 cl Olive oil
- 2 balls of mozzarella
- 1 bunch of cherry tomatoes
- 1 tbsp. coffee Herbes de Provence
- Salt
- Pepper
- In the bowl of your food processor, mix 300g of flour, egg yolks, water, 3 cl of olive oil and a little salt with a crochet hook until you obtain a sandy texture.
- Work the dough by hand on a floured work surface to obtain an elastic texture. Add a little water if necessary.
- Film your dough and store it for at least 30 minutes in the refrigerator.
- Wash and cut the cherry tomatoes into slices.
- Drain the mozzarella balls and cut them into slices.
- Roll out your dough on a floured work surface until you get a thickness of 3 to 4mm. Cut 2 strips.
- Place a strip on a ravioli mould. Fill the cells with slices of mozzarella and cherry tomatoes. Decorate with a little herbs de Provence.
- Lightly moisten the edges of your cells. Cover the whole thing with your second strip of dough then pass the rolling pin. Unmold
- your ravioli and lightly flour them to prevent them from sticking.
