
Hot pan-fried goat cheese with apples

- 2 Logs of goat cheese
- 2 Granny Smith apples
- 5 g Butter
- 1 tbsp. tablespoons olive oil
- 1?2 bunch of chopped parsley
- 1 minced garlic clove
- 12 sprigs of chives for garnish
- Ground pepper
- Preheat the oven to 150°C (th. 5).
- Cut the goat cheese logs into thick slices, then arrange them on the baking sheet covered with parchment paper and drizzle them with olive oil. Pepper.
- Cut the apples into quarters, without peeling them, then remove the core and seeds. In a skillet, melt the butter.
- When hot, cook the apples for 2 minutes per side, then place them on absorbent paper.
- Bake the slices of goat cheese for 4 min. Meanwhile, mix the chopped garlic clove and parsley in a bowl.
- Arrange the hot apple wedges and the grilled goat cheese slices on the plates, sprinkle with the minced parsley and garlic and garnish each plate with 3 sprigs of chives. Serve immediately.
- Smart tip: you can replace the goat cheese log with semi-dry cheeses such as Saint-Marcellin or Pélardon, with a pronounced flavor and whose firmer paste will hold up well when cooked.
- Season them with 1 drizzle of lemon juice and 1 tbsp. c. powdered green anise or pink berries.
