Indian vegetable curry with lime

- 250 g Pumpkin
- 2 courgettes
- 2 sweet potatoes
- 6 organic potatoes
- 150 g green beans
- 0.5 Pineapple
- 25 cl coconut milk
- 3 shallots
- 3 Cives
- 1 Lemongrass stalk
- 2 tbsp. yellow curry
- 1 pinch of fresh ginger
- 1 tbsp. coffee Coriander powder
- 1 Lime
- 1 tbsp. tablespoons olive oil
- fresh coriander
- 2 garlic cloves
- Salt
- Ground pepper
- Remove the rind from the pumpkin. Peel the sweet potatoes and pineapple.
- Peel the green beans.
- Brush the potatoes and zucchini under running water.
- Cut everything into large chunks.
- Steam the potatoes, pumpkin and sweet potatoes for 10 minutes, then add the zucchini and green beans and continue cooking for 5 minutes.
- Peel and finely chop the shallots, lemongrass and chives. Peel the garlic, degerm and press it.
- Heat the oil in a sauté pan. Brown the garlic, chives and shallots.
- Add curry, coriander and grated ginger, mixing.
- Add the pre-cooked vegetables, pineapple pieces, lime zest and coconut milk. Add salt and pepper.
- Cook for 10 minutes over low heat, stirring.
- Serve hot sprinkled with chopped coriander, lime juice and basmati rice.
