John Dory fillets with orange butter

- 4 John Dory fillets
- 3 oranges
- 2 shallots
- 120 g butter
- 10 cl liquid fresh cream
- 7 cl of sweet white wine
- a few sprigs of dill
- olive oil
- fleur de sel, pink peppercorns
- Preheat your oven to 200°C (th. 6-7). Peel 2 oranges and collect the supremes.
- Collect the juice and zest of the third orange.
- Peel the shallots and chop them finely. Chop the dill.
- In a skillet, heat 2 tbsp. tablespoon olive oil. Add the shallots to it.
- Add the wine, juice and orange zest, mix and let the liquid evaporate.
- For in the cream and leave to bubble for 2 minutes. Add the butter cut into pieces, salt and pepper.
- Let melt then mix and keep warm.
- In the skillet, heat 2 tbsp. tablespoon olive oil. Sear the John Dory fillets.
- Sprinkle with dill. Place the fillets in a baking dish. Coat with cooking juices and bake for 5 min.
- Serve the fillets coated with orange butter and sprinkled with fleur de sel and pink peppercorns.
- Serve with orange wedges.
Tip: Serve John Dory fillets with Camargue rice and a few flat beans or pan-fried zucchini.
