
Kadai Paneer

- 100 g paneer (Indian cheese)
- 1 green pepper
- 1 red pepper
- 1 onion
- 1 large onion, finely chopped
- 15 cl tomato purée
- 1 good clove of garlic and a little crushed ginger
- 3 cloves
- 4 peppercorns
- 3 green cardamoms
- 1 C. coriander seeds
- 1/2 tsp. cumin seeds
- 1 C. curry powder
- 1/2 tsp. turmeric
- 1 C. paprika
- 1 C. teaspoon dried fenugreek leaves
- water
- oil
- salt
- Grind the cardamoms, cloves, peppers and coriander seeds to powder using a mortar and pestle.
- Heat some oil in the kadhai (dish). When the oil is hot, add the cumin and chopped onion.
- When the onions are golden, add the spices: turmeric, curry, paprika, previously prepared powder, garlic and ginger and mix.
- Add the tomato puree and mix.
- Put the other onion, green pepper and red pepper and mix well.
- Put the salt and about 5cl of water and mix.
- Cover and cook over medium heat for about twenty minutes, stirring and adding a little water from time to time.
- Add the paneer and mix.
- Put the fenugreek leaves, crushing them, leaving aside the twigs.
- Put 2 tablespoons of water, mix and cook for 4 to 5 minutes.
