Lamb burger with cheddar and caramelized onions

- 100 g minced Welsh lamb
- 1 Bun's
- 25 g white cheddar
- 25 g leeks
- 2 5g caramelized onions
- 30 g cream cheese spread
- A few leaves of Batavia or Scarole
- A few fresh mint leaves
- 1 pinch of salt
- 1 pinch of pepper
Make the leek fondue :
- Wash the leeks, chop them into small pieces and blanch them in boiling water.
- Then refresh them in ice water to keep their green color.
- Take a saucepan, add a knob of butter and sweat the leek fondue.
- Season with salt and pepper and keep warm in a bain-marie.
- Make the caramelized onions:
- Chop the white onions very finely.
- Brown them without coloring in a saucepan with butter and a little sugar to caramelize them.
- Add a little water and cook for 15 minutes over low heat until you get a slightly colored compote.
- Once cooked, keep it warm in a bain-marie.
Make the cream cheese sauce with fresh mint :
- Take the cottage cheese and season it with salt and pepper. If it is too thick, add a little milk to soften it.
- Chop the fresh mint and add it to the preparation. Put the sauce in the fridge.
- Cook the already seasoned minced Welsh lamb meat on a plancha or in a frying pan.
- Toast your rustic buns while cooking the meat.
- Add the cream cheese sauce with mint then a lettuce leaf of your choice (Batavia or Escarole).
- Flip the Welsh lamb to the other side for proper cooking.
- Add the white cheddar at the end of the meat cooking to warm it up and melt slightly.
- Place everything once cooked to your liking on your buns and on the salad.
- Add the caramelized onions and the hot leek fondue.
- Finish dressing your burger by adding the top of the buns.
