
Madeleines with raclette cheese, chorizo and rosemary

- 80 g Flour
- 1⁄2 packet of baking powder
- 2 eggs
- 5 tbsp. tablespoons olive oil
- 2 slices Raclette RichesMonts
- 30 g Chorizo
- 2 tbsp. tablespoons Chopped rosemary sprigs
- Salt
- Pepper
- Preheat the oven to 240°C (th.8). In a bowl, mix the flour and baking powder. Form a well and add the eggs and oil, salt and pepper. Separately chop the rosemary, the chorizo and the slices of Raclette RichesMonts with a knife, then add them to the mixture.
- Pour into well-oiled madeleine molds and leave to rest in the refrigerator for 20 minutes.
- Bake for 3 minutes at 240°C (th.8), then lower the oven to 180°C (th.6) and cook for another 5 minutes.
Tip: It is the resting time in the refrigerator that gives the famous bump to madeleines, use this tip for all recipes, savory and sweet.
