Mango and Lime Chicken

- 4 Chicken fillets
- 2 not too ripe mangoes
- 6 limes
- 10 cl Mango juice
- 4 small white onions with their stems
- 1 garlic clove
- 1 tbsp. tablespoons chopped flat-leaf parsley
- 3 tbsp. tablespoons Oil
- 1 tbsp. allspice
- Salt
- Pepper
- In a bowl, for the juice of 4 limes, mango juice, chopped garlic, 1 tbsp. tablespoons of oil, the four-spice. Salt, pepper and add the chicken fillets. Mix well and leave to marinate for 2 hours.
- Slice 2 limes into rounds. Peel the mangoes and cut them into slices. Spread everything on a plate and sprinkle with salt. Peel the onions, chop them and finely chop their stems.
- In a casserole, place the chicken and its marinade. Cover and cook over low heat for about 10 minutes. After cooking, remove the fillets from the casserole, drain them and reserve the cooking juices in a bowl.
- Heat the rest of the oil in the pan. Add the chicken and brown it. Then add the cooking fat, parsley, onions and cooking juices.
- Cover and cook for 30 minutes over low heat.
minutes before the end of cooking, add the lime, mango and chopped onion stalks to the pan. Arrange on plates and drizzle with sauce.
Tip: You can accompany this recipe with white rice or steamed broccoli drizzled with sesame oil.
