Mango chicken curry

- 500 g Chicken breasts
- 1 not too ripe mango
- 30 cl coconut milk
- 1 red pepper (or 2 mini red peppers)
- 1 onion
- 1 tbsp. yellow curry coffee
- 1 small chilli (optional)
- 1 tbsp. tablespoons olive oil
- Salt
- Pepper
- Cut the chicken breasts into pieces. Finely chop the peeled onion.
- Cut the bell pepper, remove the seeds and cut it into strips. Slice the mango into cubes.
- In a saucepan, heat the olive oil over medium heat.
- Brown the onion and the mangoes for 5 minutes, then add the chicken pieces and stir for 5 minutes over high heat.
- Pour the coconut milk. Cover with a little water if necessary, add the curry and the chopped pepper. Add salt and pepper.
- Leave to simmer for 15 mins.
