Marinated red mullet fillets

- 8 Red mullet fillets
- 1 organic lemon (or untreated)
- 4 tbsp olive oil
- Sprigs of parsley (a little)
- Salt
- Pepper
- Arrange the red mullet flukes in a hollow dish. Rinse the lemon then grate its zest over a bowl. Also add the juice and mix with 3 tbsp. tablespoon olive oil, salt and pepper.
- For the contents of the bowl over the fish, cover and leave to marinate in the refrigerator for 2 hours.
- Heat the remaining oil in a frying pan and brown the red mullet fillets for 5 to 8 minutes. Sprinkle with parsley and serve.
- Tip: serve with pan-fried porcini mushrooms.
